Goat Cheese Burgers with Vidalia Onion Relish

These burgers are made like any old burger, but with a twist; they are topped with the tang of goat cheese crumbles. (Trust us, try it!) and a relish made from Vidalia onions!

You can make the relish ahead of time, if you wish; it will keep for several days. Of course, you can also make it while the burgers grill.
Burgers
2 pounds ground chuck
4 to 6 ounces of goat cheese crumbles
Salt and pepper to taste
Onion relish
Combine the ground chuck with salt and pepper. Form into 3 or 4 patties. Grill as desired, topping with goat cheese about 5 minutes before removing from the grill (or until it is heated through- note: goat cheese does not melt well; it will retain the shape of the crumbles somewhat).
Vidalia Onion Relish
About 30 minutes before using, or up to five days before use:
1 Tbsp oil
4 cups of thinly sliced Vidalia onions (3 to 4 large onions)
1 Tbsp light brown sugar
1 Tbsp balsamic vinegar
In a large frying pan, sauté the onion slices on medium, until they are browned (about 25 minutes). After they are browned, add in the sugar and vinegar and cook until the sugar is dissolved and the vinegar is incorporated (about 5 minutes).
Use to top burgers immediately, or refrigerate for up to five days.
